R9 285 A Viable Option for Ultra 1080p Gaming?

So I was thinking that if I buy a 285 instead of a 280x I will be able to spend more money on a new CPU. I play a lot of heavily modded skyrim as well so will there be that massive performance benefit from 3GB of VRAM?
